Penne Pasta with Broccoli and Feta
Just thought I would share a quick recipe of our dinner tonight. The ingredients are pretty simple:
1 bunch of broccoli
Approx. 4 tablespoons + 3 tablespoons of olive oil
1 lb package of penne
1 small container of feta cheese crumbles (or do it yourself to about 3/4 cup)
handful of flat italian parsley leaves
4 medium cloves of garlic
salt, pepper, cayenne (or red pepper flakes) to taste
juice of about 1/2 lemon
Begin by getting a large pot of water boiling for the dry pasta to cook in. Meanwhile, wash and cut the broccoli into small bite size pieces of the crown and softer parts of the stems.
In a medium pan (one with some depth and a cover) with the heat on just below medium, add about 4 tablespoons of the olive oil. Add the broccoli and stir. Allow oil to coat. After about a minute, allow to steam sauté with the cover on.
As the broccoli begin to soften, add the chopped garlic. Stir. Give that a couple of minutes to cook. Next add about ¾ of the package of feta crumbles (or about ½ cup). Reserve the final bit to add at the serving stage. Pour on the juice from ½ a lemon. Stir. Season with salt, pepper and hot pepper to taste.
Cook the pasta according to the package directions. Drain. Add about ½ of the package of cooked pasta to the broccoli feta mixture. Titrate the ratio of pasta to mixture to give yourself the desired result to suit your taste. Add the remaining olive oil to moisten the mixture.
Serve in a pasta bowl and add the chopped parsley and remaining feta at time of service. I added chicken tenders sauteed in olive oil to mine. Enjoy!
